ASIAN COCONUT SOUP WITH SHRIMPS

This Asian coconut soup with shrimps tastes fresh because of the lemongrass and lime juice. You can add to the ingredients any vegetables that you prefer like for instance carrots. Just make sure it’s chopped very finely.

How to make the coconut soup

Pour in a large pot the coconut milk and stock. Add the lemongrass and lemon leaves. The lemon grass should be bruised a little so it releases more flavour. Let it boil and then add the shrimps. Cook for about 8 minutes. In the meantime slice the chili in thin slices. Add the bean sprouts, the chili, fish sauce and lime juice and cook for another 5 minutes.

Optional: serve with some chopped coriander.

Ingredients for 4 portions coconut soup

  • 400 ml coconut milk
  • 500 ml stock (vegetable or fish stock)
  • 1 stalk lemongrass
  • 4 lemon leaves
  • 200 gram cleaned shrimps
  • 100 gram bean sprouts
  • 1 red chili
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • (optional) 2 tablespoons of chopped coriander leaves
