Cabbage salad with radishes and dill
- Chop the cabbage in small pieces and place in a bowl. Mix the cabbage with the pinch of salt by using your hands (it’s like massaging the salt into the cabbage). That will make the cabbage softer and give it an even better taste. Let is rest for about 15 minutes.
- In the meantime chop the radishes and the cucumber. Remove the seeds of the cucumber so that the taste is less watery. The easiest way to do that is to slice the cucumber in halves and then once more in halves. It should be now very easy to remove the seeds.
- Chop the dill and mix it with the cucumber and radishes into the bowl with the cabbage. Add two table spoons of extra virgin olive oil and one table spoon of white balsamic vinegar. Mix well and serve.
